Gin Ice Lollies: The Ultimate G&T for a Hot Summer's Day

Gin Ice Lollies: The Ultimate G&T for a Hot Summer's Day

When it's hot we like to turn our G&T's into ice lollies

They're refreshing, incredibly easy to make and a great way to use up fruit and herbs you already have at home.

How to make gin ice lollies

You only need a few ingredients:

Ingredients

  • 50ml of any Penrhos Gin
  • 2 cans of tonic
  • Cucumber, sliced
  • Leftover blueberries
  • Raspberries
  • Strawberries
  • Fresh mint
  • Ice lolly moulds

Method

  1. Add 50ml Penrhos Gin to a jug.
  2. Add two cans of tonic and gently stir.
  3. Pour the mixture into your ice lolly moulds.
  4. Add any garnish you can find (cucumber & mint is always a hit!)
  5. Freeze until completely solid.
  6. Remove from the moulds and enjoy in the sunshine.

That's it.

A very cold G&T

We love finding simple ways to make the most of ingredients that might otherwise be forgotten about.

That's part of what we do at Penrhos - taking fruit that isn't perfect enough for supermarket shelves and giving it another life in our gin.

So next time you've got some fruit that's looking a little past its best, don't throw it away. Add it to an ice lolly mould, pour over a G&T and put it in the freezer.

You might just have found your new favourite summer serve.
