A collaboration with purpose
This limited-edition gin was created in partnership with Oddbox, rescuing surplus apples, fennel and lemons that might otherwise have gone to waste.
At Penrhos, we've always believed great spirits can start with imperfect produce. By working with Oddbox, we were able to give even more delicious fruit and vegetables a second chance transforming them into a bright, fresh gin that's become one of our favourite summer serves.
Portia's Apple & Fennel Bramble
Light, refreshing and packed with crisp apple and citrus notes, this is the perfect cocktail for summer gatherings, garden parties or simply enjoying in the sunshine.
Ingredients
For the cocktail
- 40ml Penrhos x Oddbox Apple, Fennel & Lemon Gin
- 20ml fresh lemon juice
- 25ml Apple & Smoked Fennel Syrup (recipe below)
- A pinch of smoked salt
- 80ml dry cider
- Crushed ice
To garnish
- Fresh fennel fronds
- A dusting of fennel pollen (optional)
Method
- Add the gin, lemon juice, apple & smoked fennel syrup and smoked salt to a cocktail shaker filled with ice.
- Shake well until chilled.
- Double strain into a glass filled with crushed ice.
- Top with the cider.
- Garnish with fresh fennel fronds and a light dusting of fennel pollen.
Serve immediately.
Apple & Smoked Fennel Syrup
Ingredients
- 1 cup sugar
- 1 cup apple juice
- 1 cup water
- 1 fresh fennel bulb, roughly chopped
- 7.5ml orange blossom water
- 5ml lemon juice
- A pinch of salt
Method
- Combine the sugar, apple juice and water in a saucepan over a medium heat, stirring until the sugar has dissolved.
- Add the chopped fennel and orange blossom water, then bring to a gentle boil.
- Reduce the heat and simmer for 30 minutes.
- Stir in the salt and lemon juice, then simmer for a further 20 minutes.
- Remove from the heat and leave to cool completely, allowing the fennel to infuse.
- Strain into a sterilised bottle or airtight container and store in the fridge until ready to use.
Top tip: Don't throw away the cooked fennel. Use it as a garnish for your cocktail or add it to salads, soups or roasted vegetables.
